Prep Table Rail Warm? Prep Table Repair in Metro Atlanta
Sandwich, salad and pizza prep tables, mega-tops and drawer bases for kitchens across the Atlanta metro.
The prep table is where the order gets built. Sliced tomatoes, shredded lettuce, deli meat, cheese and sauces sit in pans across the top, and the refrigerated base below holds the backup. It is also the hardest-working piece of refrigeration in many small kitchens: the lid is open all lunch, the cutting board takes a beating, and the whole unit often sits a few feet from a pizza oven running at full blast.
When the rail starts running warm, the line slows, product gets pulled, and someone has to decide what can still be served. We repair refrigerated prep tables for sub shops, pizzerias, salad bars, cafés and restaurants around Atlanta. Call (770) 334-4410 — phones are answered 24/7 — or book with the form. Visits are same- or next-day.

What a Failing Prep Table Looks Like
- "The pans on top are warm, but the base is cold." The rail is the hardest spot to keep cold. A rail fan that has stopped, blocked air passages, an iced evaporator or a lid left open for hours can all leave the pans above 41°F while the cabinet below reads fine.
- "The base is warm too." The whole system is falling behind: a condenser clogged with flour or grease, a stopped condenser fan, a failing compressor or a refrigerant problem.
- "Product at the back of the rail is freezing." Cold air hitting the pans unevenly, a thermostat set too low to make up for a weak rail, or a control that is no longer reading properly.
- "The lid won't stay up, or the hinge cracked." Lids are opened and dropped shut over and over all day. Hinges and their brackets wear out and can be replaced.
- "Water is pooling inside the base." A blocked drain, a drain tube that came loose, or a condensate pan that is overflowing.
- "The doors or drawers won't seal." Torn gaskets, bent drawer frames or worn slides leave a gap that warm kitchen air finds right away.
- "The cutting board is warped and gaps along the edge." Not a refrigeration fault, but a warped board lets warm air and food debris into the rail and makes the table harder to clean. Boards can be replaced.
- "It runs nonstop and the side panel is hot." A dirty condenser, a unit pushed tight against a wall, or heat from a nearby oven or fryer.
- "The compressor clicks on and off." A weak start relay or capacitor, a compressor overheating on its overload, or a dirty condenser that makes every start harder.
How a Prep Table Keeps Pans Cold
A prep table is really two refrigerators sharing one system. The base is a small reach-in: an insulated cabinet with an evaporator and fan, cooled by a compressor and condenser that usually sit behind a louvered panel at the bottom or on the side.
The rail on top is the tricky part. On many tables, the base fan pushes cold air up through passages around the pans and back down again. Other designs chill the rail with refrigerated walls around the pans. Either way, the rail works against the room every time the lid is open, so pans can only stay cold if the air path is clear and the product sits within the cold zone.
Most manufacturers ask for two things that operators often skip: keep pans filled no higher than the top of the rail, and close the lid whenever the table is not in active use. Product piled above the pans sits in kitchen air, and an open lid through a slow afternoon lets the rail warm and the evaporator frost up.

How We Handle a Prep Table Call
On the phone. Tell us the make, the size, whether the problem is in the rail, the base or both, and what temperature you are reading in the pans. The data plate is usually inside the base on a side wall.
Diagnosis. The technician measures product temperatures in the rail and the base, checks the air passages and rail fan, inspects the evaporator for ice, cleans enough of the condenser to see it, and tests the fan motors, start components, compressor and control.
Before work. You hear what failed and what the repair involves, and nothing is replaced until you agree.
Repair and check. We fit genuine or OEM-approved parts and watch the rail and base come back toward temperature. If a part has to be ordered, we tell you which and set a time to return. Prep table repairs come with a warranty of up to 6 months on parts and labor.
Keeping Service Going Until We Arrive
- Move rail pans into a working reach-in or walk-in, or nest them in ice in a deeper pan, and refill the line in small batches.
- Close the lid between orders. Every minute it stays shut helps.
- Probe the food, not just the air. The FDA Food Code sets 41°F or below for cold holding of foods that need temperature control, and inspectors check rail product.
- Pull the table away from the wall a few inches if it is pushed tight, so the condenser can breathe.
- Time as a control is a written-procedure tool. The Food Code allows some kitchens to hold food without temperature control for a limited time, but only with written procedures already in place, and some jurisdictions require approval. Ask your county environmental health office before you rely on it.
Prep Tables We Repair
- Sandwich and salad prep tables with one, two or three doors.
- Mega-top tables with extra rows of pans for bigger menus.
- Pizza prep tables with deep cutting boards and raised rails.
- Drawer-base prep tables for tight lines.
- Countertop refrigerated rails that sit on a worktop.
- Dual-sided and open-rail tables used for counter-service build lines.
We service self-contained commercial refrigeration units (5 lbs of refrigerant or less) per EPA Section 608 Type I requirements. We do not service walk-in coolers or remote/rack refrigeration systems.
Care That Keeps the Rail Cold
- Clean the condenser monthly on pizza tables and every one to three months elsewhere, with the unit unplugged.
- Fill pans only to the rail line and keep them seated correctly.
- Close the lid at the end of every rush, and overnight.
- Replace torn gaskets early; they leak cold air into the room around the clock.
- Do not store hot product in the base. Cool it first, as the Food Code expects: from 135°F to 70°F within 2 hours, and to 41°F within 6 hours in total.
Prep Table Makes We Service
We service True prep tables, as well as units from other commercial refrigeration makers. Our technicians have years of experience with them, from compact sandwich units to long mega-tops.
We are an independent repair company. True and the other makers of the tables we repair do not endorse us, and we are not affiliated with any of them. Equipment still under the manufacturer's warranty is usually best taken to the dealer first.

Emergency Fridge Repair
Why Pizza Tables Have It Hardest
Pizza prep tables usually stand right beside the deck or conveyor oven, in the warmest air in the kitchen. Flour dust drifts into the condenser fins and mats them faster than grease would. Add a lid that stays open through the dinner rush and a cutting board deep enough to hold dough trays, and you have a unit that needs more attention than any other piece of refrigeration in the shop.
Emergency FAQ
Refrigerated Prep Table FAQ
Why are the pans on top warm when the base is cold?
The rail is open to the room and depends on a clear path for cold air. A stopped rail fan, an iced evaporator, blocked air passages, overfilled pans or a lid left open for long stretches are the usual reasons.
What temperature should product on the rail be?
Foods that need temperature control should stay at 41°F or below, the cold-holding limit in the FDA Food Code. Probe the food in the pans, since air readings can look better than the product.
How often should a prep table condenser be cleaned?
Monthly on pizza tables because of flour dust, and every one to three months in most other kitchens. Unplug the unit before cleaning.
Should I keep the lid open during service?
Open it when you are building orders and close it between rushes. Manufacturers design the rail to recover with the lid closed.
Can you replace a cutting board or lid hinge?
Yes. Cutting boards, lid hinges, gaskets, drawer slides and casters can all be replaced along with refrigeration parts.
Do you repair the refrigeration system itself?
Yes. Compressors, fans, controls and sealed-system repairs are handled by our EPA 608 certified technicians.
What warranty is included?
Prep table repairs include a warranty of up to 6 months on parts and labor.
